There are two foods I love to eat, but rarely cook – leeks and fish. For St David’s day, there isn’t a more perfect dish than this to celebrate Wales.

When British Leeks asked me to recreate one of their dishes celebrating Wales’ national emblem, I just had to choose this dish. Firstly because I love seafood, and secondly it was completely out of my comfort zone, but claimed to be a quick and easy dish!

The ingredients list is simple; leeks, prawns, fish pie mix, chilli, lemon, cream cheese, butter, oil, and pasta.

The timings are also simple. In theory, it should be ready in 15 minutes, so it’s the perfect evening meal.

But how did it actually turn out?

Easy seafood and leek pasta dish recipe

The recipe has been created by food writer Helen Best-Shaw, and is classed as an easy recipe and in all honesty, it really was.

Fish can be quite an overwhelming thing to cook (for me) but this made it so easy!

To start, you soften the leeks in butter and oil before adding cream cheese, chilli and lemon, creating a lovely creamy sauce.

From there, add some pasta water and then add the fish to poach for around 5 minutes.

Add the pasta, mix together and voila! A delicious, decedent, and delightfully easy dish to make.

Leek recipes to celebrate St David’s Day

St David’s Day is a day to celebrate all things Welsh, and what better way to do that than through food.

Leeks are such an underrated vegetable however they’re full of flavour and are so easy to cook with. They quickly add texture and seasoning to a dish and go so well with cheese and fish.
